Baked Sandwiches with Pistachio and Cauliflower

Sandwiches in different variants are something that is often found on our menu. However, this version with cauliflower, onions, raisins, and pistachios is still something that probably most of you haven’t heard of.

Ingredients:

  • 1 bunch cauliflower
  • 1/4 cup olive oil
  • Salt and pepper – to taste
  • 2 cloves Garlic
  • Cheese – as much as you want
  • 1/2 cup raisins
  • 1/4 cup pistachios
  • 1/4 cup white wine
  • 8 slices bread
  • 2 tablespoons finely chopped parsley

Preparation:

Preheat oven to 180 °C / 356 °F and coat the baking pan with baking paper.

In a bowl, mix together oil, finely chopped garlic, salt, and pepper. Add slices of chopped cauliflower and mix well.

Arrange the cauliflower on the heated baking dish and bake for 25 minutes. Then turn to the other side and bake for 10 to 20 minutes until softened.

While the cauliflower is cooled, in a small bowl place the raisins in the wine and let it soak for about 10 minutes. Drain.

Bake the pistachios in a pan and chop them when cool. In a baking dish, arrange the slices of bread and put the cauliflower, pistachios, and raisins with cheese on top.

Bake until cheese is melted, up to 10 minutes. When finished sprinkle them with fresh chopped parsley and put another slice of bread on top. Serve the sandwiches while hot.
